Eggplant butter

Sounds weird? Tastes amazing. If this thing is cooked well you will get an awesome and healthy butter - substitute.


Recipe:
1 big eggplant
olive oil
salt, pepper
1 garlic clove
2 tblsp. soy sauce

Cut the eggplant in half. Pour some olive oil on the eggplant halfs and sprinkle some salt and pepper on them. Put the eggplants in the ovan to 180 degrees C 30-35 minutes. Try them with a spoon, if it doesn't come off from the skin nicely, it's raw and you have to cook it well (otherwise you'll get nasty tasting poop). If the eggplant is ready, rip the skin away and put it in a bowl, add the garlic clove, soy sauce and puree. Ready!
