Divine quinoa tortilla
This is the first time I made quinoa and it's one of the best lunches ever :P
In Estonia, you can get quinoa from Prisma or eco stores. Maybe even Rimi.
For ~2 tortillas
Recipe:
4 tblsp. Eggplant butter (in 'butters')
2 tomatoes
cucumber
few salad leaves
quarter or half an avocado
100 g fresh mushrooms + seasonings
ketchup
handful of quinoa
nutrional yeast (this could be left out, but it's in eco stores)
If you don't have the eggplant butter, first make that (or use any other butter or cream you like - hummus, bean pasta etc.) Secondly, slice the mushrooms, season them with salt, pepper and any herbs you like, then steam them about 30 minutes. If you don't have a steamer, you can fry them with onions and it'll also be good. Steamed mushrooms would just taste a bit more fresh. At the same time, you can wash your quinoa and boil it in salty water til it's soft and tasty. Then cut the tomatoes, cucumbers, salad and avocado, add the quinoa. Now you can start filling the tortilla.
Add the eggplant butter.
Then the quinoa salad.
Put some mushrooms on top, add ketchup and nutrional yeast if you like.
Put the tortilla(s) in the ovan 200 degrees C for 10 minutes and enjoy.
