Coconutdreamcream

I did this a while back now and I still think about it time to time. I should do it again sometime soon, because it really was dreamy and creamy and delicious. But for people who don't like too creamy things, you can replace one of the coconut cream packs with cashew cream or add a bit more soy milk.


Recipe:
(sorry if the measurements are bad, I didn't write down exact numbers)
crust (big oat cookie): 1 cup oat flakes
raisins
1 tblsp. melted vegan butter
sugar
1/3 cup whole wheat flour
(taste and adjust)
filling: 2 packs coconut cream (1 pack is 200 ml)
200 g melted dark chocolate
sugar
100 ml soy milk
fresh berries (strawberries)

Mix the crust ingridients, put it in a baking sheet lined cake form and cook it in 180 degree celcius ovan for 30 minutes. Let it cool.
Cut fresh strawberries on the big oat cookie.
Melt the chocolate in a hot water bath. Whip the coconut cream with the sugar, soy milk and chocolate. Pour the filling on the berry-oat cookie and put it in a refrigerater. Eat it whenever you want, but if you eat it the next morning, the taste will remind ice cream. :P
