Zucchini brownie
Aaaaaanyways, my granny brought us a lot of zucchini and what else to do with delicious zucchini than moussakas, lasagnas and CAKE!
It came out pretty unique, not too sweet and chewy, you could eat a lot of it at once (at least I could) and I hope it's not too bad because well, it's mainly zucchini!
RECIPE:
400g of zucchini (half of a medium one)
half a banana
1 dl oil
140g of wheat flour
140g of durum (whole-wheat) flour
170g of brown sugar
3 teasp. cocoa
1 teasp. baking powder
3 teasp. rice cream
pinch of salt
100g dark chocolate
soy milk
cayenne pepper
Grate the zucchini in a bowl and mix it with the banana and oil. Then add the sugar, cocoa and baking powder. Mix in the flours, pinch of salt and rice cream.
Pour it in a baking paper covered form and bake it for about an hour in 180-200 °C.
Then make the chocolate drizzling - melt the chocolate in a water bath. When it has melted, add 2 tablsp. of soy milk three times, each time stir it throughlly. Lastly, mix in a dash of cayenne pepper and drizzle the chocolate over the cake when it's done.
If it's not sweet enough for you, cover it with powdered sugar.
