Coconut-marzipan cake with berries

 During summertime you just have to enjoy all the nice things summer gives to you as much as you can. When winter comes I'm definetly going to miss all these fresh berries.



 Ingredients:
CRUST: 125g cold plant-based margarine (70%)
3 dl wheat flour
1 tblsp. sugar
1-2 tblsp. plant milk

COCONUT-MARZIPAN FILLING: 200g marzipan
50g warm margarine
0,75 dl sugar
1,5 dl coconut flakes
2 egg replacerers (flaxseed flour with water)
2 tblsp. wheat flour

BERRY TOPPING: 5 dl different berries (gooseberries, currants etc.)
2 tblsp. sugar
1 tblsp. starch

 Cut the margarine and add the flour and sugar, add such an amount of milk that you get a decent dough. Press the dough to the bottom and edges of a 26cm cake form. Put the form in the freezer for 10 minutes.
 Preheat the ovan to 200C. Take the cake form from the freezer and put it in the ovan for 10 minutes.

 At the same time grate the marzipan, mix it with the margarine, sugar and coconut flakes. Add the egg replacerers and flour, mix untl it's even. Put the filling on the cooked cake base.
 Mix the berries with the sugar and starch and cover the filling with the berry topping.

 Cook the cake at 175C for 25-30 minutes and let it cool. Decorate the cake with fresh berries, coconut flakes and powdered sugar if you'd like.
