Filled pancakes

Got this idea from Sandra Vungi, I was bored so I looked at her foods and saw this, I wanted to do this a long time ago already. I replaced the ordinary flour with durum flour (I don't like the way wheat flour makes me feel) and I did a very different filling. It was really good, even tough the pancakes didn't stick together after the filling part :'(

RECIPE:                                                   
(pancakes)                                                               (filling)
170g durum flour                                                   100g rice
1 teasp. baking soda                                              5 dried soy patties (small)
1 teasp. apple vinegar                                           half a zucchini
3/4 teasp. salt                                                         4 tablsp. smokey bbq flavored ketchup (Felix)
4 dl water                                                               1 tablsp. soy sauce
                                                                               1 onion
                                                                               salt, pepper, parsley, cumin, 
                                                                               1 (organic) stock cube

1. Boil some water, add the stock cube and rice (I had one pack of rice, I made the whole thing). Boil the rice on low heat.
2. While the rice is boiling, make the pancake dough, mix all the dry ingredients, then add the water. Let it sit for a while as you prepare the filling.
3. When the rice is ready, put 100 g of it in a bowl. Don't throw the rice water away, add a bit of hot water and put the soy patties in. Let them get soft on low heat.
4. Now make the pancakes. Heat a pan with some oil (just a little, probably that's why mine didn't stay together, I had too much oil), when the pan is hot, add one big spoon of dough. Spread it quickly all around the pan. Cook all the cakes on one side, stack them on a plate. I got 6 cakes.

   



5. While the pancakes are cooling, fry the onion. Then make the filling. Mix together the rice, grated zucchini, soy patties - that have been cut into pieces, ketchup, soy sauce and seasonings.
6. Flip the pancakes to the fried side, add about 2 table spoons of filling to that side, then put the sides together. Do that to all the cakes.
7. Cook the pancakes once again. Do it well or you'll have a plate full of raw cake mash.

  1. Nii äge, et katsetasid! Kusjuures mul on sama juhtunud, kui olen täisterajahu kasutanud. See ei ole kahjuks nii elastne. Üks võimalus ka pooleks panna tavalist nisujahu ja täistera.
